Ingredients
1head of cauliflowertrimmed and cut into florets
4-5clovesfresh garlicor jarred
1cupchicken brothVegetable Broth or water also work
ΒΌcupsour creamor reduced fat/light
2-ouncecream cheeseor reduced fat/light
1tbspbutteror light butter
1teaspoonsalt
1/2teaspoongarlic powder
Instructions
In a medium size stock pot, add the cauliflower florets, garlic, and chicken broth. Bring to a boil over medium-high heat. Boil for 10-12 minutes until cauliflower is soft and tender. Drain and return to pot.
Using an immersion blender or electric mixer, mash the cauliflower and garlic to desired level of smoothness and stir in the remaining ingredients.
Top with chives and serve warm.
Optional: Pop under a low-broiler oven until lightly browned for a crispy top.
