My shrimp and vegetable stir fry is packed with broccoli, bell pepper, onion, and mushrooms. Serve with brown rice and teriyaki sauce for a quick and yummy meal!
Ingredients
1/2cupUncle Ben’s® Boil-in-Bag Whole Grain Brown Rice
1tspcanola oil
1cupbroccoli florets
1/2small green pepper,diced
1/4cuponion, sliced
1/2cupbaby bella mushrooms,sliced
5medium-sized shrimp,deveined and peeled
1/8cupKikkoman® Less Sodium Teriyaki Marinade & Sauce
Instructions
Prepare rice according to package directions.
In a wok or a deep, large fry pan, heat canola oil.
Add broccoli, pepper, onion and mushrooms. Stir until cooked almost cooked through, about 5-7 minutes.
Add shrimp and thoroughly mix with veggies. Continue cooking until shrimp is pink, about 2-3 minutes.
Place 1/2 cup of brown rice in the bottom of a bowl. Top with stir-fry and drizzle with Teriyaki sauce.
