This easy baked sweet and sour chicken recipe is lightened up, oven baked, and full of flavor. A family favorite from Skinny Suppers, updated.
Ingredients
Chicken

Boneless, skinless chicken breasts
cut into 1-inch cubes

pineapple chunks packed in juice
juice reserved

Instructions
Preheat oven to 350°F. Coat an 11x7-inch baking dish with cooking spray.
Toss chicken with cornstarch in a resealable bag until coated.
Sear chicken in olive oil in a cast iron skillet over medium-high heat, 2 to 3 minutes per side, until browned.
Drain pineapple, reserving juice.
Whisk pineapple juice, ketchup, rice vinegar, soy sauce, garlic, sweetener, red pepper flakes, and remaining cornstarch.
Layer chicken, pineapple, onion, and bell peppers in the baking dish. Pour sauce over top.
Cover loosely with foil and bake 30 minutes.
Uncover and bake 10 to 15 minutes more, until sauce thickens and chicken reaches 165°F.
Stir in butter until melted.
Garnish with green onions and serve over rice.
Notes
Sweetener options: monk fruit blend, stevia blend, or 1 teaspoon sugar or honey for a more classic flavor.
Make ahead: chop veggies and mix sauce up to 1 day in advance.
Storage: refrigerate up to 4 days, or freeze up to 3 months.
