Weeknight Vegetable Stir Fry with Shrimp

Veggie shrimp stir fry is a dish that can be made fast on a week night and is easily a family favorite. With lots of veggies and high protein value, thanks to the shrimp, a little of this tasty dinner goes a long way. Using brown rice adds more nutrition and fewer carbs than the traditional white rice.

What are the best vegetables to use in stir fry?

Our veggie stir fry recipe calls for a broccoli stir fry mix from the freezer section. However, with stir fry, you can add just about any vegetables that you like and it will still taste great. Opting for frozen vegetables instead of fresh makes this dish even less expensive. Also, using frozen vegetables will often give the ish more vitamins and minerals because most vegetables are flash frozen as soon as they are picked, which locks in the fresh taste and doesn’t give the vegetables a chance to lose vitamins.

Variations to Vegetable Stir Fry with Shrimp

I like a recipe that can be easily changed to fit into the tastes of whoever is eating it. I also like having recipes on hand that I can make a few small changes and make it seem like a different recipe.

  • Change the sauce. While I love the taste of the oyster sauce and soy sauce, if you want something different with the same ingredients, try teriyaki sauce.
  • Change the veggies. This recipe calls for a broccoli stir fry mix, but you can easily change it to a different stir fry mix. Instead of a stir fry mix, you can try frozen carrots, frozen peas, or any other vegetables.
  • Add cabbage. Bring in a vegetable that isn’t always considered in a stir fry. Try using a coleslaw mix, which usually features cabbage and carrots in thin strips.
  • Try broccoli slaw. If your family doesn’t like big pieces of broccoli but you still want to get the health benefits of broccoli, try using a broccoli slaw mix. Found in the produce section near the coleslaw mix, the broccoli is cut much like coleslaw but it has all the vitamins and mineral of regular broccoli.

How do you make shrimp stir fry sauce?

Making a shrimp stir fry sauce is easy. Using chicken broth, soy sauce, garlic, and oyster sauce, mixed with vinegar, brown sugar and cornstarch, the broth comes together with a nice Asian flavor. The sauce is made before adding it to the shrimp. Once the sauce is added to the shrimp, it cooks into the shrimp, adding flavor and coating it.

Ingredients to make Vegetable Stir Fry with Shrimp at home

  • sesame oil
  • frozen broccoli stir-fry mix
  • baby bella (cremini) mushrooms
  • chicken broth
  • soy sauce
  • minced garlic
  • rice vinegar
  • oyster sauce
  • light brown sugar
  • ground ginger
  • cornstarch
  • medium shrimp Uncle Ben’s® Ready Rice® brown rice
  • sesame seeds
  • green onions

How to Vegetable Stir Fry with Shrimp Recipe

In a wok or large skillet, heat the sesame oil over medium-high heat. Add the broccoli stir-fry mix and mushrooms. Sauté the vegetables for 5 minutes, until the vegetables have started to soften. In a small bowl, whisk together the chicken broth, soy sauce, garlic, vinegar, oyster sauce, brown sugar, ginger, and cornstarch. Add the shrimp to the vegetables and mix. Pour the sauce over the shrimp mixture to evenly cover, and stir frequently for until the sauce has thickened and the shrimp are pinked and cooked through, 3 to 5 minutes. Microwave the rice according to package directions. To serve, place ⅓ cup cooked rice in the bottom of a bowl, top with a heaping 1 cup of the stir-fry mixture, and garnish with sesame seeds and green onions.

  • 2 teaspoons sesame oil
  • 2 14-ounce bags frozen broccoli stir-fry mix
  • 1 8-ounce container baby bella (cremini) mushrooms, sliced
  • ½ cup low-sodium chicken broth I like Pacific® Organic
  • 2 tablespoons less-sodium soy sauce
  • 1 tablespoon minced garlic
  • tablespoons rice vinegar
  • 1 teaspoon oyster sauce
  • 1 tablespoon light brown sugar
  • ½ teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 1 pound medium shrimp about 40, peeled and deveined
  • 1 8.8-ounce pouch Uncle Ben’s® Ready Rice® brown rice
  • ½ teaspoon sesame seeds
  • 3 green onions thinly sliced

Instructions
