Valentine’s Rice Crispy Treats

Most people love to take a big bite of a rice crispy treat. This one can absolutely be used for an afternoon snack or a special holiday or birthday dessert. Any excuse will do!

How do you make rice crispy treats with chocolate on top?

Once you have made the rice crispy treat base, you will use melted chocolate and dip the rice crispy treats into it. You can dip the whole rice crispy treat for full coverage or only one side for less of a coating. Either way, it gives the treats a finished look and adds another layer of flavor.

I like adding the individual treats to a paper straw or a lollipop stick. This makes it super easy to hold and dip into candy melts or chocolate and coat as you wish. Before the chocolate dries, you can also sprinkle any of your favorite sprinkles, nuts, or even mini chocolate chips on top for fun and an extra flavor infusion.

Tasty Variations to try

When making rice crispy treats, there are a lot of ways you can change it up to create a new dessert. Here are a few ideas to consider:

  • Adding Chocolate Chips. Just as the mixture is coming off the stove, stir in some chocolate chips, or sprinkle on top of the chocolate coating once dipped for added texture and decor.
  • Use your favorite flavored chips. Think about adding peanut butter chips, butterscotch chips or even mint. There are a lot of flavored chips available that will taste great in this recipe.   
  • Flavored Chocolate. This recipe calls for white chocolate chips as the melted chocolate coating. If you change the white chocolate chips to candy melts, you have a large variety of flavored chocolate to choose from.

How do you melt the chocolate?

When melting chocolate, you can use one of two methods. You can put the melts in the microwave, or you can melt it on top of the stove with a double boiler. 

For the microwave method, put the melts in a microwave-safe bowl and start by microwaving 30 seconds. Stir the melts and add another 30 seconds. Always stir between each microwave time, careful not to let it scorch or burn.

For the double boiler method, heat a small pot of water on the stove. Put a metal or glass bowl over the top of the pot and add the melts. Stir the chocolate as it heats up. Lower the temperature to not overheat or seize the chocolate.

  • unsalted butter
  • marshmallows
  • Rice Krispie cereal – regular or chocolate
  • white chocolate candy melts
  • sprinkles (optional)
  • heart-shaped cookie cutter (optional)
  • lollipop sticks or decorative straws (optional)

How do you make Valentine’s Rice Crispy cakes with marshmallows?

Rice crispy treats are one of the easiest desserts to make. If you’re not the best baker, this is definitely the dessert for you!

Grease a 9×13-inch baking dish with nonstick cooking spray, or line with parchment paper instead and set aside. Heat a large nonstick saucepan over low heat. Melt the butter, then add the marshmallows and stir until completely melted.  Stir until dissolved, then remove from heat before adding the cereal. Stir to evenly combine the marshmallow mixture with the cereal. Pour the rice krispie cereal and marshmallow mixture into the prepared baking dish. Press GENTLY with your fingertips until completely spread out (the harder you pack them in, the harder they are to eat).

They will not take up the entire 9×13-inch baking dish. Allow them to set for roughly an hour to room temperature.

Using a heart-shaped cookie cutter, cut out heart-shaped treats in the pan and set on a plate.

Gently insert a lollipop stick, or decorative straw into the bottom of each heart. (Note: If using a decorative straw, use a toothpick or bamboo skewer to make a larger whole to insert the straw in easily.)

Prepare the chocolate topping by melting the white chocolate melts over medium low heat. Spoon a little melted chocolate onto one side of the heart sized treat and spread with the back of the spoon.

Sprinkle evenly with the decorative sprinkles. For an easy variation to this recipe, you can fold the sprinkles into the rice krispie treat mix before pressing the mixture into the baking dish. After the chocolate has dried, serve the same day or store in an airtight container for up to 2 days.

Celebrate Valentine's Day (or any day) with these super fun chocolate rice crispy treats in the shape of a heart! Dunk in some chocolate and top with sprinkles for a festive treat the family will enjoy!

Ingredients
 

  • 6 tablespoons unsalted butter
  • 16 ounces marshmallows or mini marshmallows
  • 6 1/2 cups regular or chocolate Rice Krispie cereal
  • 8 squares white chocolate melts
  • 1/2 cup decorative sprinkles

Other:

  • 2- inch heart-shaped cookie cutter
  • lollipop sticks or decorative straws cut in half

Instructions

  • Line a 9x13-inch baking dish with parchment paper or spray generously with nonstick spray. Set aside.
  • Add the rice krispie cereal to a large heat proof bowl and set aside.
  • In a large saucepan, melt butter over medium heat. Once melted, add in all but 1 cup of the marshmallows. Reduce heat to low and continue stirring until completely melted.
  • Remove from heat and pour the marshmallow mix into the heat proof bowl with the rice krispie cereal and the remaining 1 cup of marshmallows. Stir to combine.
  • Pour the rice krispie cereal and marshmallow mixture into the prepared baking dish. Press GENTLY with your fingertips until completely spread out (the harder you pack them in, the harder they are to eat).
  • Allow to set, about 1 hour.
  • Using a heart-shaped cookie cutter, cut out heart-shaped treats in the pan and set on a plate. Gently insert the top of a paper straw into the bottom of each heart. 
  • Prepare the chocolate topping by melting the white chocolate melts over medium low heat. Spoon a little melted chocolate onto one side of the heart sized treat and spread with the back of the spoon. Cover with Sprinkles and let cool. 
  • After the chocolate has dried, serve the same day or store in an airtight container for up to 2 days.
