Usually, fajitas are grilled hot and fast, but making fajitas in the slow cooker is so easy! My Easy and Healthy Slow Cooker Chicken Fajitas have a depth of flavor only the slow cooker can give. I add peppers, onions, and whole chicken breast along with spices, and cook it all together until the chicken is falling apart. Shredding the chicken and adding it back into the sauce and veggies allows everything to become homogenous. Serve over whole wheat tortillas and you have a healthy meal that took little effort! How Healthy Are Chicken Fajitas?

Lean chicken breast is super healthy because it does not have a lot of fat content. Adding bell peppers and onions help add nutrients and vitamins to the dish. I also prefer to serve my fajitas on high-fiber, whole wheat tortillas. Whole wheat allows you to feel full for longer, and has more nutritional value than white flour tortillas.

Tortillas

Ingredients for Slow Cooker Chicken Fajitas

  • cumin
  • chili powder
  • red chili flakes
  • dried oregano
  • onion powder
  • garlic powder
  • salt
  • black pepper
  • onion
  • red bell pepper
  • yellow bell pepper
  • green bell pepper
  • boneless, skinless chicken breasts
  • lime juice
  • diced tomatoes and green chilies
  • high-fiber whole wheat tortillas

Ingredients

How to Make Easy and Healthy Slow Cooker Chicken Fajitas

In a small mixing bowl, stir together the cumin, chili powder, red chili flakes, oregano, onion powder, garlic powder, salt and black pepper.

Spices

Place half of the sliced onions and peppers on the bottom of the slow cooker, and the chicken on top of that.

Sprinkle half of the seasoning mix over the chicken, flip the chicken with tongs and sprinkle the remaining seasoning on the chicken.

Add the rest of the onions and peppers, squeeze in the juice of 1 lime, and pour in the Rotel.

Veggies

Cover and cook on low for 6 hours, or high for 3 hours.

Take the chicken out and slice or shred it, then add it back to the slow cooker for 10-15 minutes on low.

Chicken, peppers, and onions are all slow cooked with lots of spices, and then shredded and served on whole wheat tortillas. A super healthy update on classic fajitas!

Ingredients
 

  • 2 tbsp cumin
  • 1 tbsp chili powder
  • 1/4 tsp red chili flakes
  • 2 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 lbs. boneless, skinless chicken breasts
  • juice of 1 lime (about 2 tablespoons)
  • 1 10 oz. can diced tomatoes and green chilis
  • 16 low-carb, high-fiber whole wheat tortillas, original size

Instructions
