First, I add all the ingredients to the food processor, and then I process everything together until it forms a dough. Form and shape the cookies before baking until golden brown. How Are These Cookies Low Carb?

I wanted to make a cookie that did not have flour in the batter. Oatmeal cookies are the perfect solution because whole oats are processed in the food processor to make an oat flour. The oats allow this recipe to be low carb but still delicious. Also, if you can find gluten free oats, you can also make this recipe gluten free!

Cookies with Chocolate Chips

Ingredients in Low Carb Energy Oatmeal Cookies

Oatmeal Cookie Ingredients

  • mashed banana
  • quick oats
  • egg
  • unsweetened applesauce
  • almond butter
  • reduced-sugar dried cranberries
  • dark chocolate chips

Cookie Dough

How to Make Low Carb Energy Oatmeal Cookies

Preheat the oven to 350°F. Line 2 baking sheets with parchment paper or a silicon baking mat, and set aside.

Banana in Oatmeal Cookies

In a food processor, or a stand mixer with the paddle attachment, mix all of the ingredients together until just incorporated.

Oatmeal Cookie Dough

Add mix-ins after the dough is blended.

Oatmeal Cookies with Chocolate and Cranberries

Drop heaping tablespoon full mounds on the prepared baking sheets, or use a small cookie scoop.

Cookie Scoop

Gently flatten the tops of the cookies before baking with a rubber spatula.

Flat Oatmeal Cookies

If you decide to not flatten them, they will stay in a ball shape after being baked.

Cookies on Sheet

Bake until the edges are slightly brown, 10-12 minutes. Cool on wire cooling racks.

These sweet, chewy cookies are made with banana and oats, and are studded with dark chocolate chips and dried cranberries. These will be your new favorite flourless cookie!

Ingredients
 

  • 1 ripe banana, mashed
  • 2 cups quick cooking oats
  • 1 egg
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond butter
  • 2 tbsp reduced-sugar dried cranberries
  • 2 tbsp dark chocolate chips

Instructions
