Indulge in the delightful and comforting flavors of a Cinnamon French Toast Casserole that is the perfect make ahead brunch recipe!  I love this recipe for Overnight Cinnamon French Toast Casserole as its a delicious combination of thick-sliced brioche bread soaked in a sweet custard, infused with warm cinnamon, sweet sugar, and hints of vanilla, all baked to perfection.

Ingredients:

This recipe has a lot of traditional French Toast ingredients, but what makes it special is that it’s an overnight, casserole style dish. It’s really just the way we treat the ingredients that changes the outcome.

French Toast Casserole Ingredients

For this Overnight Cinnamon French Toast Casserole, you will need the following:

  • thick-cut brioche bread
  • eggs
  • whole milk
  • vanilla extract
  • cinnamon
  • granulated sugar
  • room temperature butter
  • light brown sugar

What are some optional toppings for this recipe?

Because this is a casserole dish, there really are endless ways to customize to your liking. Some of my favorite ways to top this recipe are:

  • Diced fresh apples 
  • Raisins 
  • Chocolate chips 
  • Strawberries

Helpful Tips for Overnight Cinnamon french toast casserole:

Be sure to use thick-cut Brioche bread or something similar.  It’s important that the bread is sliced thick to help ensure the egg mixture can soak into the bread before baking.  

Overnight Cinnamon French Toast Casserole Recipe

Also, loosely cover the dish with aluminum foil while baking to prevent the tops and corners of the bread from getting too brown and drying out. 

Directions:

  1. In a medium size mixing bowl or measuring cup, add eggs, milk, granulated sugar, 2 teaspoons of cinnamon, and vanilla. Whisk until everything is combined.
  2. Then take 1 slice of bread and spread butter evenly to cover the bread. Sprinkle a little bit of the brown sugar and a pinch of cinnamon.

  1. Repeat with the remaining bread. 
  2. Arrange the bread in a round baking dish, standing up evenly.

  1. Pour the egg mixture over the bread to generously cover all of the bread.
  2. Cover and refrigerate for at least 4 hours to overnight. I like to refrigerate overnight as I think it gives the bread enough time to soak in the flavors. 
  3. Bake at 350 degrees F, covered loosely with aluminum foil for 40-45 minutes. Remove the foil and bake for an additional 7-15 minutes or until the top is golden brown.
  4. Sprinkle with powdered sugar and drizzle with syrup.  Enjoy!

Ingredients
 

  • 1 loaf brioche bread thick-sliced
  • 5 eggs
  • 2 cups whole milk
  • 2 tsp vanilla extract
  • 4 tsp cinnamon divided into separate bowls
  • 3/4 cup granulated sugar
  • 3 tbsp butter room temperature
  • 1/2 cup brown sugar divided

Instructions
