2 cups all-purpose flour
1 cup granulated sugar
1 cup monk fruit sweetener (you can also use brown sugar*)
1/4 teaspoon salt
1/4 cup unsweetened cocoa powder
1 scoop chocolate protein powder (I recommend She Activates Milk Chocolate Protein Powder)
1/2 cup (1 stick) unsalted butter
1/2 cup unsweetened applesauce
1 cup water
1/2 cup buttermilk (or 1/2 cup milk + 1/2 tablespoon lemon juice)
2 large eggs
1 teaspoon baking soda
1 teaspoon vanilla extract

For the Frosting:
1/4 cup (1/2 stick) unsalted butter
4 tablespoons (1/4 cup) unsweetened cocoa powder
6 tablespoons milk (dairy or non-dairy)
1 teaspoon vanilla extract
2 1/2 cups powdered sugar (sifted)
1/4 cup chocolate protein powder
1/2 cup chopped pecans (optional)
Sprinkles (optional, for decoration)

Step-by-Step Instructions

Preheat the oven to 350°F (175°C). Grease and lightly flour a 13×18-inch jelly roll pan.

  • 1/2 cup unsalted butter 1 stick
  • 1/2 cup unsweetened applesauce
  • 1 cup water
  • 1/2 cup buttermilk or 1/2 cup milk + 1/2 tablespoon lemon juice or vinegar
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract

For the Frosting

  • 4 tbsp unsweetened cocoa powder
  • 6 tbsp milk dairy or non-dairy
  • 1 tsp vanilla extract
  • 2 1/2 cups powdered sugar sifted

Instructions

For the Cake:
