How to Make Frozen Yogurt Blueberry Bites

This simple recipe can be put together in about 10 minutes. However, it does need to chill for an hour in the freezer once prepared. When the blueberry bites are frozen, you can store them in an airtight container in the freezer for a couple of weeks. One pint of blueberries should give you about 10 servings of this recipe at 12-13 blueberries each.

Ingredients for Blueberry Frozen Yogurt Bites

Ingredients:

  • 1 pint blueberries (about 125 blueberries)
  • vanilla, nonfat Greek yogurt
  • stevia (or your favorite sugar substitute)

Instructions:

  1. Line a baking sheet with parchment paper or a nonstick mat, and set aside.
  2. In a medium mixing bowl, stir together the yogurt and stevia.
  3. Working in 2 batches, gently fold in the blueberries to coat in the yogurt. Scoop them up with a fork and tap the excess yogurt off.
  4. Place the blueberries on the baking sheet, being careful to not have them touch.
  5. Freeze the baking sheet until the blueberries are completely frozen, about 1 hour.
  6. Store leftovers in an airtight container in the freezer.
