Who doesn’t love birthday cake? If you are in the mood for cake without the guilt, try my Birthday Cake Batter Popsicles! These little frozen treats taste just like a real cake! First I combine boxed cake batter, along with sugar-free vanilla pudding, unsweetened almond milk, and rainbow sprinkles before pouring the mixture into popsicle molds. After, place the molds into the freezer and freeze until solid. It’s as easy as that! Serve at a birthday party, or keep in the freezer for a rainy day. How Healthy Are These Popsicles?
Birthday cake usually comes in at over 300 calories per serving. This is after factoring in the cake and the frosting. In order to save the calories, I make these popsicles instead. The vanilla pudding inside is sugar free, cutting out tons of sugar. Per popsicle, this recipe comes in at only 72 calories! This way, everyone can enjoy in the birthday festivities, even the guests watching their weight.

Ingredients in Birthday Cake Batter Popsicles
- dry white cake mix
- sugar-free instant vanilla pudding
- unsweetened almond milk
- rainbow sprinkles
How to Make These Popsicles
Whisk together the cake mix and the pudding mix.
In the bowl of a stand mixer with the whisk attachment, or with an electric mixer, beat together the dry mix and almond milk for 2 minutes on low. Stir in the sprinkles and pour into 6 popsicle molds.
Freeze for 8 hours, or overnight.

- 2 cups unsweetened almond milk
- 2 tbsp rainbow sprinkles
