Ingredients to make Ready to Grill Barbecue Chicken Kebabs
- 1 pound boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks, cubes (5 ounces)
- 2 red bell peppers, large dice
- 1 large sweet onion, large dice
- salt and pepper, to taste
- ½ cup reduced-sugar BBQ sauce
- 3 tablespoons reduced-sugar orange juice
- 8 bamboo skewers
How to make Ready to Grill Barbecue Chicken Kebabs
Begin by heating your outdoor grill to medium-high heat and oil your grill grates so your kebabs do not stick. Dice your chicken breasts into similar sized pieces to your pineapple and veggies. Alternating between your chicken, pineapple, and veggies, skewer the ingredients onto your bamboo skewers evenly until no ingredients remain. Salt and pepper your skewers to taste.
In a small bowl, stir together your barbecue sauce and orange juice until homogeneous. Add your skewers to the hot grill. Brush the sauce onto your grilling skewers multiple times during cooking, turning and coating the entire kebab evenly with sauce.
Grill the kebabs for 4-5 minutes until the chicken and cooked through and the pineapple and veggies are soft.
Ready to Grill Barbecue Chicken Kebabs
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup fresh pineapple chunks, cubed
- 2 red bell peppers, large dice
- 1 large sweet onion, large dice
- salt and pepper to taste
- 1/2 cup reduced-sugar BBQ sauce
- 3 tbsp reduced-sugar orange juice
- 8 bamboo skewers
Instructions
- Heat an outdoor grill (or indoor grill pan) over medium-high heat and oil it so the kabobs do not stick.
- Alternate threading the chicken, pineapple, peppers, and onions onto the skewers. Salt and pepper the skewers, to taste.
- In a small bowl, stir together the BBQ sauce and orange juice, and brush the skewers with the BBQ sauce several times while grilling.
- Grill the kabobs until the chicken is cooked through and the pineapple and vegetables are soft, 4 to 5 minutes on each side.
