One-Pot meals are all the craze because of how easy they are to clean up. To spend more time with my family after the meal, I developed One Pot Light and Creamy Buffalo Chicken Pasta. This dish uses whole wheat noodles, nonfat cream cheese, buffalo sauce, and chicken breast to create a sensational meal that is also healthy. Ranch seasoning helps give the pasta a kick, and it pairs so well with the buffalo sauce. This One Pot Light and Creamy Buffalo Chicken Pasta will fill you up, and be a breeze to clean up after!

What Healthy Ingredients Are in This Dish?
This pasta is labeled as light and creamy for a reason. I use light and creamy ingredients for a lovely sauce texture, such as fat-free cream cheese, fat-free blue cheese crumbles, and ranch seasoning mix. Using low-fat or nonfat ingredients in the dish allow the calorie and fat counts in the final dish to be low as well.

Ingredients in One Pot Light and Creamy Buffalo Chicken Pasta
- boneless, skinless chicken breasts
- salt
- black pepper
- extra virgin olive oil
- ranch dressing and seasoning mix
- reduced-sodium chicken broth
- water
- buffalo wing sauce
- whole grain penne noodles
- fat-free cream cheese
- reduced-fat blue cheese crumbles
How to Make the Pasta
Heat a large nonstick skillet over medium-high heat. Season the chicken with salt and pepper, to taste. Add the oil and chicken, cooking for 2-4 minutes, browning all sides.
Sprinkle the ranch packet over the chicken, stirring together to coat, then add the chicken broth, water, buffalo sauce, and penne to the skillet.
Cover, and reduce the heat to a simmer, cooking until the penne is done and the sauce has thickened slightly, 16-18 minutes.
Meanwhile, cut the cream cheese into cubes. When the penne is done, stir in the cream cheese until fully melted.
Garnish each serving with reduced-fat blue cheese crumbles.
One Pot Light and Creamy Buffalo Chicken Pasta
Ingredients
- 2 lbs. boneless, skinless chicken breast, cut into 1-inch pieces
- salt, to taste
- black pepper, to taste
- 1/2 tbsp extra virgin olive oil
- 1 1 oz. packet ranch seasoning mix
- 2 cups reduced-sodium chicken broth
- 1 cup water
- 2 tbsp buffalo wing sauce
- 8 oz. whole grain penne noodles, dry
- 1 8 oz. package fat-free cream cheese
- 1/4 cup reduced-fat blue cheese crumbles
Instructions
