Slow Cooker Chicken with Pepperoni

Is pepperoni low carb friendly?

Yes, pepperoni is a friend when you are eating low carb. Most varieties of pepperoni are either 0 or 1 carb. If possible, you want the 0 carb varieties simply because it is fewer carbs.

Variations to this Keto Slow Cooker Pizza

When you are trying to eat low carb, variations are key. It is important to be able to change up recipes in order to stay on track.

  • Use pork pepperoni
  • Change the pepperoni for sliced sausage. It won’t be pepperoni chicken bake, but it still has a great flavor.
  • Add Cheese. At the end of the cooking time, add cheese to the top. Give it a few minutes to melt.  
  • Mix in onions or peppers
  • Add mushrooms

Ingredients

Pepperoni chicken is filled with great tasting ingredients. Pepperoni is mixed with chicken to give this recipe a pizza taste. It is cooked in chicken broth to keep it moist. 

  • Chicken breasts
  • Chicken broth
  • Turkey pepperoni
  • Tomato paste
  • Black olives
  • Italian seasoning
  • Basil
  • Red pepper flakes
  • Salt
  • Black pepper

How to Make Keto Slow Cooker Chicken with Pepperoni 

Place the chicken on the bottom of the slow cooker, and season the tops with salt and pepper.

In a medium mixing bowl, stir together the chicken broth, tomato paste, Italian seasoning, and red pepper flakes, then pour over the chicken in the slow cooker.

Next, add the pepperoni and the olives to the slow cooker.

Cover and cook for 3 hours on high or 6 hours on low.  You want to cook until the chicken falls apart and can be easily shredded.

Shred the chicken in the slow cooker with tongs or 2 forks, and mix it up to absorb the remaining liquid for an additional 30 minutes.

Ingredients
 

  • 2 pounds boneless skinless chicken breasts
  • salt to taste
  • black pepper to taste
  • 1 cup reduced-sodium chicken broth
  • 3 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon basil
  • ¼ teaspoon red pepper flakes
  • 35 turkey pepperonis sliced in half
  • ½ cup sliced reduced-sodium black olives

Instructions
