If I could only make one recipe for the rest of my life, it would be this slow cooker Southern pot roast recipe. Honestly. Holidays, Sunday suppers, Bible study nights, a regular Tuesday when I just want everybody at the table. This is the one I reach for every single time.

Here’s the story. I grew up in Kentucky eating hearty, stick-to-your-ribs food, and Mississippi pot roast was always a favorite. If you’ve never had it, the original calls for pepperoncini peppers, the juice from the jar, an au jus packet, ranch seasoning, and butter.

Then I met Daron. And Daron is not a pepperoncini guy. Not the peppers, not the juice.  So the peppers had to go.

Everything else stayed. The au jus, the ranch, the butter, and a long slow cook that makes the whole house smell like Sunday. Nobody at my table misses the peppers one bit.

The original came from a home cook in Mississippi. I’m just a home cook from Kentucky. So mine is Southern pot roast, and Kentucky pot roast works too. It’s been a family favorite ever since, especially with Easton.

Why You’ll Love This Slow Cooker Southern Pot Roast Recipe

  • Everybody eats it. Daron, the kids, Easton most of all. It’s the dinner they ask for.
  • All the flavor, none of the pepperoncini. Ranch and au jus give you that tangy, savory Mississippi taste without the peppers or the juice.
  • The slow cooker does the work. About 15 minutes of hands on time, then you walk away and go live your life.
  • It feeds a crowd. One roast covers a holiday table, a Bible study, or a Sunday supper with enough left over for sandwiches on Monday.
  • It goes with everything. Mashed potatoes, Southern green beans, and corn casserole are my plate. More on that below.

Food for Thought: Peace on the Loud Days

“You will keep in perfect peace those whose minds are steadfast, because they trust in you.” Isaiah 26:3

Can I be honest with you? Some days I read a verse like this and think, sure, Lord, peace sounds great. Meanwhile the phone is buzzing, somebody needs something, and my to-do list has its own to-do list.

But look at what it actually says. Perfect peace belongs to the mind that stays fixed on Him. It doesn’t say peace for the woman who finally got caught up. Thank goodness, because she doesn’t exist.

Peace isn’t something we earn once the calendar clears. He hands it over right in the middle of the mess. The only question is where my mind lands.

So if you’re carrying a lot today, set it down for a minute. Take a breath. Trust Him with the pieces you can’t fix before dinner. He’s got them.

Ingredients

  • 1 chuck roast (3.5-4 pounds)
  • 1 1/2 Tablespoon black pepper
  • 1 Tablespoon salt
  • 2 tablespoons extra virgin olive oil
  • 1 packet ranch seasoning
  • 1/2 stick of butter
  • 1 packet Au Jus Gravy Mix
  • 2.5 cups beef stock
  • 1 tablespoon cornstarch
  • 1/2 cup cool water for the gravy

Instructions

  1. Prepare the Roast: Pat the chuck roast completely dry with paper towels. Generously season both sides with the salt and pepper. A dry roast sears. A wet one just steams.

  2. Sear the Roast: Heat the olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 2-3 minutes per side.

  3. Assemble in the Slow Cooker: Place the roast in a slow cooker sprayed with non-stick spray or lined with a disposable liner. Sprinkle the ranch seasoning and Au Jus gravy over the roast. Add the butter on top of the roast. Gently pour the beef stock around the sides of the roast.

  4. Cook the Roast: Cover and cook on low for 7-8 hours or on high for 5 hours, until the meat is tender and easily shredded.

  5. Make the Gravy: Once the roast is done, transfer the meat to a serving dish and shred, discarding any excess fat. I like to add 1 cup of liquid to the roast in the dish to keep it moist.  Strain 1 1/2 cups of liquid from the slow cooker into a small saucepan. In a separate bowl, whisk together 1/2 cup cool water with 1 tablespoon of cornstarch. Stir the cornstarch mixture into the strained liquid. Bring to a simmer over medium heat and cook for 2-3 minutes, until the gravy thickens. Remove from heat.

Tips, Swaps, and Make-Ahead Notes

  • Don’t skip the sear. It only takes about 10 minutes, and it’s where a lot of that deep, roasted flavor comes from.
  • Low beats high. If you have the time, go low. The longer, gentler cook gives you the most tender roast.
  • Need extra gravy? Gravy is half the reason people come back for seconds. For a big crowd, strain 3 cups of liquid and whisk 2 tablespoons of cornstarch into 1 cup of cool water.
  • Make it ahead. Sear the roast and load the slow cooker insert the night before. Cover and refrigerate, then set it on the counter for 20 minutes before you turn it on.
  • Keeping it warm. Hosting Bible study or company? Switch the slow cooker to warm after you shred the roast, and add a splash of stock if it starts to look dry.
  • Storage. Keep leftovers in an airtight container in the fridge for up to 4 days. Store the gravy separately if you can.
  • Freezing. Freeze the shredded meat with a little gravy for up to 3 months. Thaw it overnight in the fridge, then warm it gently on the stove or in the microwave.

Frequently Asked Questions

Can I make Mississippi pot roast without pepperoncini?

Absolutely. That’s exactly what this recipe is. Ranch and au jus carry the tangy, savory flavor, and the butter makes the gravy rich. Daron isn’t a fan of the peppers or the juice, and we’ve never missed them.

What is the difference between Mississippi pot roast and Southern pot roast?

Mississippi pot roast has a very specific ingredient list: chuck roast, ranch, au jus mix, butter, and pepperoncini. My version keeps everything except the peppers, so I call it Southern pot roast.

Is au jus mix the same as onion soup mix?

No. Onion soup mix is dried onion and seasoning, and au jus mix is a beef-flavored gravy seasoning. I use au jus here because it’s the classic pairing with ranch in a Mississippi style roast. If you want a little onion flavor, slice one up and layer it under the roast.

What is the best cut of beef for slow cooker pot roast?

Chuck roast, every time. It has the marbling and connective tissue that turn tender and juicy after a long, slow cook.

Do I have to sear the roast before slow cooking?

You don’t have to, but I really recommend it. Searing builds a deeper, richer flavor in both the meat and the gravy.

Can I freeze leftover pot roast?

Yes. Freeze the shredded meat with a little gravy in an airtight container for up to 3 months.

Serving Suggestions

Here’s my plate. Creamy mashed potatoes, Southern green beans, and corn casserole. That’s it. That’s the whole meal. Spoon the gravy over the potatoes and the roast, and set a basket of warm rolls on the table for sopping up whatever’s left.

For Sunday supper, pile the roast on a big platter and put the gravy in a bowl on the side so everybody can help themselves. For the holidays, it’s a lifesaver because it frees up your oven. For Bible study, keep it warm in the slow cooker with a ladle nearby and let everybody build their own plate.

Closing

This one started with a Mississippi recipe, a Kentucky girl, and a husband who isn’t a fan of pepperoncini. Now it’s the meal I turn to for every kind of table, from holidays to Bible study to a regular weeknight.

Here’s what I love most. When it hits the table, everybody slows down. People pass the potatoes, go back for more gravy, and stay in their chairs a little longer than they planned.

Honestly, that’s the whole point. Good food that keeps people sitting there.

If you make it, tell me how it goes. I want to hear what your family thinks.
