Meals that take little effort and ingredients are my favorite to make on a busy day. 3 Ingredient Slow Cooker Pineapple Salsa Chicken is perfect in a pinch! This dish is always delicious, and kids love it. I start by placing the chicken and salsa in the bottom of the slow cooker. Leave that to cook for a few hours before adding some pineapple and zucchini. Continue cooking for another 30-60 minutes until everything is tender. Serve with whole wheat tortillas, rice, or quinoa. What Are the Health Benefits of This Dish?
While we know that lean chicken breasts are great for adding protein, this dish also has salsa, pineapple, and zucchini inside. Salsa is made with tomatoes, which have Vitamin C, Vitamin A, and iron. Pineapple also has tons of Vitamin C and also Vitamin B-6. Zucchini is one of my favorite vegetables and has a high source of antioxidants. This whole dish has health benefits to it!

Ingredients in 3 Ingredient Slow Cooker Pineapple Salsa Chicken
- boneless, skinless chicken breasts
- tomato salsa (hot, medium, or mild)
- pineapple chunks in 100% juice
- zucchini
How to Make this Dish
Place the chicken breasts in the bottom of the slow cooker and cover them with the salsa.
Cook on high for 4 hours or low for 6 hours, or until easily shredded. Shred the chicken.
Add the pineapple with ⅔ cup of the canned juice, and the zucchini to the slow cooker and cook for an additional 30 minutes to 1 hour, or until the zucchini is soft. Serve plain, in a whole wheat tortilla, or with rice or quinoa.

- 2 lbs. boneless, skinless chicken breast
- 1 16 oz. jar tomato salsa, hot, medium, or mild
- 1 20 oz. can pineapple chunks in 100% juice (reserve juice)
- 3 medium zucchini, large dice
Instructions
- Place the chicken breasts in the bottom of the slow cooker and cover them with the salsa.
- Cook on high for 4 hours or low for 6 hours, or until easily shredded. Shred the chicken.
