Bruschetta and chicken are two of my favorite dishes, so combining them seems natural. My Lightened-Up Grilled Chicken Bruschetta Pasta has a delightful grilled flavor and is topped with a super flavorful bruschetta topping! I start by grilling up sound pounded chicken breasts. Then, I make the bruschetta topping with tomatoes, basil, vinegar, olive oil. Serve with some bowtie pasta and top the chicken with the tomato mixture. What Are the Health Benefits of Bruschetta?

Bruschetta usually consists of tomatoes, basil, extra virgin olive oil, and occasionally balsamic vinegar. Tomatoes are known for their lycopene content, which is linked to decreasing the chance of heart disease and cancer. Basil is linked to less inflammation in the body and improves blood flow. Olive oil contains antioxidants and the fatty acids that our bodies need to be healthy. Finally, balsamic vinegar can promote healthy digestion and reduce blood sugar. Such a healthy all-in-one snack or meal!

Ingredients in Lightened-Up Grilled Chicken Bruschetta Pasta

Grilled Bruschetta Chicken Ingredients

  • boneless skinless chicken breasts
  • sea salt
  • black pepper
  • bow tie pasta
  • minced garlic
  • tomatoes
  • fresh basil
  • balsamic vinegar
  • extra virgin olive oil
  • reduced-fat Parmesan cheese

How to Make Lightened-Up Grilled Chicken Bruschetta Pasta

Preheat grill to high heat or start heating your coals if you’re using a charcoal grill.

Chicken

Place each chicken breast between two pieces of waxed paper and gently pound with the flat side of tenderizing mallet (or a rolling pin) until about 1/2 inch thick.

Spray both sides of chicken with grilling spray and season with salt and pepper. Place on hot grill, cooking 5 minutes on each side or until the internal temperature reaches 160ºF. Remove breasts from grill and set aside.

Grilled Chicken

Cook pasta according to package directions and drain.

Once chicken has had a chance to cool, slice into bite-sized strips.

Bruschetta Pasta

In a large skillet lightly coated with cooking spray on medium heat, sauté garlic for about 1-2 minutes. Add tomatoes, basil, vinegar and olive oil. Allow sauce to simmer on medium-low heat for about 5 minutes. Add chicken strips, salt and pepper to taste. Lightly combine.

Set out 4 plates, place 4 oz. of cooked bow tie pasta on each plate. Top with ¼ of chicken/tomato mixture (a little more than a 1/2 cup), then sprinkle with 1 tablespoon of reduced-fat Parmesan cheese.

**Make fast tip: No time to grill? Purchase pre-grilled chicken strips and use instead!

This delicious pasta dish combines grilled chicken, bruschetta, and bow tie noodles for a wonderfully flavorful Italian dinner that the whole family will love!

Ingredients
