Scones are often avoided when making homemade treats.  So many think they are a difficult baked good to make, but really, they are so easy to make! This recipe cuts back on the fat by using yogurt in place of butter, and instead of the heavy cream often found in scones recipes, I use skim milk and powdered sugar for a light glaze.  You are going to love the rich vanilla flavor and be surprised at how easy this is to make.

Can I Freeze Scones for Later?

Scones are super easy to freeze.  Simply make as directed, and allow to completely cool before you place them in a labeled and dated freezer bag.  I prefer to not glaze them if I am freezing them.  I can then just whip up a fast glaze when I reheat them to serve.  This is less messy, and just as delicious!

Let them thaw overnight in the refrigerator, or pop into the oven at 350ºF to heat through for 10 minutes before serving.

Can I Add Fresh Fruit to My Scones? 

Yes!  That is one of the reasons I adore this easy recipe.  I know that it has a simple base flavor that is great alone but works well with any addition I want to mix into the dough.  If you want to add fruit to your scones, I recommend fresh fruit over frozen.  The frozen fruit often is moister and will cause your bake times to take longer which can lead to dry or burned scones.

If you do want to add frozen fruit, rinse it and pat dry before folding into the dough. Strawberries, blueberries, raspberries, and even chocolate chips are easy to mix into this recipe for added flavor.

How to Make This Easy Scones Recipe

I prefer to begin baking by measuring all of my ingredients and laying them out on my work area.  This helps me make sure I have everything I need before getting into the baking process.  Next, I preheat the oven and line a baking sheet with parchment paper or a silicone baking mat.  I prefer using the silicone baking mat for most recipes.

Using a stand mixer or hand mixer, you will begin with mixing together most of your dry ingredients.  Once those are thoroughly blended, you will sift your dry ingredients into another bowl.  Add the dry to wet ingredients gradually until just mixed.

Next, you will knead the dough a few times on a clean but floured work surface.  Shape the dough into a circular shape and cut it into pieces.

Triangle or pie slices are the traditional shape, but you can cut these into any shape you prefer.

This Vanilla Bean Easy Scones Recipe is a perfect sweet breakfast idea that goes great alongside your favorite tea or coffee blend for a delicious treat.

Equipment

  • Hand or Stand Mixer

Ingredients
 

Scone Ingredients

  • 1 egg
  • 1 egg white
  • 1/2 cup plain nonfat Greek yogurt
  • 1 vanilla bean seeds only
  • 2 cups all-purpose flour plus 2 tablespoons for kneading dough
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt

Glaze Ingredients

  • 1/4 cup powdered sugar
  • 1 tbsp skim milk

Instructions

  • Preheat the oven to 375° F and line a baking sheet with parchment paper or a silicone baking mat, and set aside.
  • In the bowl of an electric stand mixer, whisk the egg, egg white, yogurt and vanilla together.
  • In a medium mixing bowl, stir together 2 cups of flour and the other dry ingredients. Gradually add them to the wet ingredients in the mixer.
  • Stir together until the dough just comes together.
  • Sprinkle the remaining 1 tablespoon of flour on a clean work surface, and knead the dough 3-4 times. Shape the dough in a circle about 8 inches in diameter and 1 inch thick
  • Cut the scones into 8 equal-size triangles and transfer to the prepared baking sheet.
  • Bake for 10-12 minutes, until lightly golden brown.
  • While the scones are cooling, prepare the glaze: In a small mixing bowl, whisk together the powdered sugar and milk.
  • Evenly drizzle the glaze over the cooled scones.
