Are Chipotle Barbecue Peanut Chicken Tenders high in carbs?
Traditionally, fried chicken tenders are extremely high in carbohydrates. While this recipe is not fried, it is baked in the oven, covered in a low-sugar barbecue sauce and coated with crunchy peanuts. You will still get a lovely crunch without the deep-fry.

Ingredients to make Chipotle Barbecue Peanut Chicken Tenders
- Boneless, skinless chicken tenders
- Low-sugar barbecue sauce
- Chili powder
- Cumin
- Coarsely-ground unsalted peanuts
How to make Chipotle Barbecue Peanut Chicken Tenders
To make this recipe, preheat your oven to 350ºF. You will need to cover a baking sheet with nonstick foil and set aside while you tend to the chicken. Add your chicken to a gallon-sized zip-top bag. Using a meat mallet, heavy frying pan, or rolling pin, pound out your chicken slightly to flatten and ensure evenness on all sides.
In a shallow bowl, combine your barbecue sauce, chili powder and cumin. Stir to combine and set aside. In another shallow bowl, add your coarsely-ground peanuts and set aside.
Now, you can do the next step one of two ways. First, you can dip both sides of your chicken into the sauce until completely coated. Once coated, dip your chicken into the peanuts and coat evenly. Place onto the baking sheet and bake. Second, if you would like to marinate the chicken, pour the sauce into the zip-top bag with the chicken and allow to marinate in the fridge up to 1 hour. After marinating, dip the chicken into the peanuts and coat evenly, then bake. Bake your chicken for 25-30 minutes until the chicken is cooked through and the nuts are golden brown. Serve while hot.
Chipotle Barbecue Peanut Chicken Tenders
Ingredients
- 12 ounces boneless, sknless chicken tenders
- 1/2 cup low-sugar barbecue sauce (We used Stubb's Original barbcue sauce)
- 2 tsp chili powder
- 1/2 tsp cumin
- 1/3 cup unsalted peanuts, coarsely ground in the food processor
Instructions
- Preheat oven to 350ºF. Cover baking sheet with non-stick foil and set aside.
- Place chicken tenders in a 1 gallon large food-safe plastic bag. Using a meat mallet, the back of a small iron skillet or rolling pin, pound chicken slightly.
- In a shallow bowl, combine barbecue sauce, chili powder and cumin. Mix well.
- Now you can do the next step two ways. One way is to start dipping both sides of the chicken in the sauce, then dip one side into the peanuts and place on baking sheet. Or you can pour the sauce in the bag with the chicken and let the chicken marinate in the refrigerator for 1 hour. In that case, preheat your oven a few minutes before you decide to dip the chicken in the peanuts.
- Bake for 25-30 minutes or until chicken is cooked through and the nuts are browned. Serve immediately.
