Dessert on a stick is a super fun way to eat treats! My Light and Easy: Strawberry Shortcake Skewers are a quick, healthy dessert that are exciting to eat. First, I make a homemade light shortcake dough and bake them off until golden. Once cooled, I can layer the shortcakes on skewers with fresh strawberries. To top it all off, I use whipped topping to add that signature creaminess. These Light and Easy: Strawberry Shortcake Skewers are unlike anything you’ve ever had!

What Healthy Ingredients Are In This Shortcake?

I make this shortcake from scratch using a healthier recipe that I devised, using less fat and calories than what is traditional. I use whole wheat white flour for added fiber and nutrients. To bind, I use low fat buttermilk and applesauce to avoid adding more fat. All combined, 2 of these skewers are only 168 calories per serving, with only 5 grams of fat! Now that’s a dessert worth eating.

Ingredients in Light and Easy: Strawberry Shortcake Skewers

Strawberry

  • white whole wheat flour
  • baking soda
  • salt
  • sugar
  • unsalted butter
  • unsweetened applesauce
  • low-fat buttermilk
  • fresh strawberries
  • bamboo skewers
  • light whipped topping, optional

How to Make Light and Easy: Strawberry Shortcake Skewers

Preheat the oven to 400°F and line two baking sheets with parchment paper or spray with nonstick cooking spray.

In a large bowl, stir together the flour, baking soda, salt, and sugar.

Cut the cold butter into the dry ingredients with a pastry blender or clean hands.

In a small bowl, stir together the applesauce and buttermilk. Pour the wet ingredients into the dry ingredients until the dough comes together; it will be sticky.

Strawberry Shortcake Skewer Dough

Using two spoons, drop the dough in about ½ tablespoon-sized mounds on the prepared baking sheet. There should be 36 biscuits total. Bake for 4-5 minutes until the bottoms are slightly browned.

When the biscuits are cool, assemble the kabobs by alternating three biscuits and three strawberry slices on each skewer.

To serve, dollop (optional) light whipped topping.

These adorable skewers are made with fresh strawberries, a homemade light shortcake, and are topped with some creamy whipped topping.

Ingredients
 

  • 1 1/2 cups white whole wheat flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 2 tbsp unsalted butter, cold
  • 2 tbsp unsweetened applesauce
  • 3/4 cup low-fat buttermilk
  • 1 quart container fresh strawberries, hulled and sliced in half horizontally (about 20)
  • 12 6-inch bamboo skewers
  • light whipped topping *optional
