Why is Greek Yogurt Healthy?
This unique cookie recipe calls for Greek yogurt in the dough. Omitting some of the butter from a traditional cookie recipe and replacing it with Greek yogurt allows for the cookies to still have a butter flavor, but have way less fat and calories. Greek yogurt is an excellent source of protein, vitamin B12, calcium, and probiotics. I love to add this stuff to all kinds of dishes!

Ingredients in Light and Easy: Homemade Sugar Cookies
- butter
- plain, nonfat Greek yogurt
- sugar
- egg
- vanilla
- whole-wheat white flour
- baking soda
- salt
How to Make Light and Easy: Homemade Sugar Cookies
Preheat the oven to 350°F and spray a baking sheet with nonstick cooking spray or a Silpat mat.
In a medium mixing bowl, whisk together the flour, baking soda, and salt; set aside.
In a stand mixer with the paddle attachment, or in a large mixing bowl with a hand mixer, cream the butter, yogurt and sugar together.
Add the egg and vanilla and beat until smooth.
Slowly add the flour mixture in two batches and beat until the dough comes together.
Drop the cookie dough in tablespoon-size mounds on the prepared cookie sheet.
Bake for 8-10 minutes, until the edges are slightly golden.
