Avocado is one of my favorite foods ever. It seems natural that I would add it to my Tasty Avocado Chicken Salad because it is so creamy and delicious. This chicken salad has elements of guacamole inside, such as red onion, cilantro, and lime juice. Add chicken, mayo, and Greek yogurt and you have the best chicken salad you have ever made. I like to make my chicken fresh by poaching it, but you can use prepared chicken breast if that is all you have. You may have heard the avocado is a high-fat food. And it is! Avocado contains all of the good fats that our bodies need. Ingredients in Tasty Avocado Chicken Salad
- boneless, skinless chicken breasts
- low sodium chicken broth
- bay leaf
- avocado
- red onion
- cilantro
- plain, nonfat Greek yogurt
- light mayonnaise
- lime juice
- salt
- cumin
- garlic powder
How to Make Tasty Avocado Chicken Salad
In a medium stockpot, bring the chicken broth to a boil. Add the bay leaf and chicken, then bring back up to a boil. Reduce the heat to medium-low and simmer covered for 15 minutes, flipping over at the halfway mark. The internal temperature should read 165º F. Discard the bay leaves and reserve the chicken on a plate until cool enough to touch, then shred and set aside.
While the chicken is cooling, prepare the dressing in a large mixing bowl by whisking together the yogurt, mayonnaise, lime juice, salt, black pepper, cumin and garlic powder. Add the avocado, red onion, cilantro, and cooled chicken to the bowl.
Gently toss all of the ingredients together. Chill before serving.
Tasty Avocado Chicken Salad
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts
- 2 cups low sodium chicken broth
- 1 dried bay leaf
- 1 avocado, medium dice
- 1/2 cup red onion, diced
- 1 tbsp cilantro, chopped
- 1/2 cup plain nonfat Greek yourt
- 1/4 cup light mayonnaise
- 2 tbsp lime juice
- 1/4 tsp salt
- 1/2 tsp cumin
- 1/4 tsp garlic powder
Instructions
- In a medium stockpot, bring the chicken broth to a boil. Add the bay leaf and chicken, then bring back up to a boil.
